Hi there, In my last post on our keto diet journey, we looked at some delicious keto snacks you could make ahead and take with you. Today, we’ll look at desserts.
Sweet treats are hard to come by when dieting, but I’ve come up with some good ideas for you.
You can also check out low-carb bloggers on the internet for some great recipes.
One thing to think about is almond flour. It’s basically just ground almonds and it does a great job of replacing high-carb wheat flour in lots of recipes.
It’s a bit pricier than wheat flour, but you can probably find it at your local grocery store or wholesale market.
Finely ground usually gives better results than blanched flour if your store has both types.
Another type of flour is coconut, which is, as it sounds, simply ground coconut flakes.
This type of flour is a bit temperamental because it absorbs liquid more than almond flour does. It is less expensive than the almond flour, though, and you can use less of it.
You also need to think about sweeteners. Two good brands are Swerve & Lakanto. Swerve can
usually be found in your grocery store. It’s a combination of erythritol, stevia, and the company’s own flavorings.
You can substitute it 1 for 1 for sugar (unlike plain stevia) and it comes in a granulated version, powder, and brown “sugar.” Lakanto is only available online at the moment and is made of monk fruit.
Otherwise, it’s just like the Swerve substitute.
Most desserts need liquid, too. This is where cream cheese, Greek yogurt, butter, & heavy cream
come into play. Just pay attention to carbs and you’ll be fine. Let’s look at examples now: Keto Chocolate Mousse.
You’ll need five ingredients: 1 cup heavy cream, ¼ cup sifted cocoa powder (unsweetened), ¼ cup
powdered sweetener, 1 teaspoonful vanilla and ¼ teaspoonful kosher salt.
First, whisk heavy cream until it’s good and firm (stiff peaks). Next, add in other ingredients
and whisk until well combined. No refrigeration or baking required!
